Mushroom Soup & Garlic Bread

Made these for my husband's birthday back in 2009.
Thought of sharing. ^_^

Mushroom Soup
Ingredients:

2 tblspoons of butter
1 tblspoon of oil
1/2 cup of diced carrots
1 large rib of diced celery
12 to 16 ounces sliced mushrooms (combination/varieties of mushrooms, fresh/canned)
1 clove of minced garlic
4 minced flat leaf parsley
4 cups of chicken broth (OR 2 cups of water & 2 cups of chicken broth)
3/4 cup of full cream milk
seasoning OR salt & pepper to taste

~In a large saucepan, heat butter & oil over a medium-low heat.
Add diced carrot & celery, cook until almost soft.  Add in mushrooms & garlic, stir evenly.
Stir in chicken broth & bring it to a simmer. Cover & reduce heat to low, cook for about
15 to 20 minutes until vegetables are tender. Seasoned it to taste, stir in full cream milk & heat through.
Garnish with flat leaf parsley & serve.

Serves 2 to 3.

Garlic Bread

1 loaf of french bread, sliced diagonally
butter for spreading both sides
some garlic

~Spread butter evenly onto sliced french bread.
Rub garlic against the buttered bread & pan toast it 1 minute per side OR until golden brown.
