Steam Green Mud Cake (Kek Lumut)

There's so many different types OR version of this cake.
Some had tea in it. Well, this is my mom's another version & I loved it.
Made it with her last Sunday and another success. Moist & soft. Yummy. ^^


Ingredients:

340 g butter (12 oz)
180 g castor sugar
8 large eggs (10 for medium / small)
200 g of sweetened condensed milk (Half a can of small canned condensed milk)
1 teaspn of vanilla extract
1 teaspn of baking powder
100 g flour OR more if your prefer it to be less chewy
120 g Horlicks
250 g Nestum (small packet)
1 1/2 caps of green colouring (OR less, to your liking)

~ Line the bottom of a square 9" X 9" baking pan with aluminium foil / baking paper.
Grease the sides with butter & flour. Set aside.

~ Beat butter & sugar until fluffy. Add eggs, condensed milk & vanilla extract. 
Mix until well combined. Sift baking powder & flour over the mixture.
Add in  Horlicks & Nestum. Combine it in slowly. Lastly, mix in the green colouring.

~ Pour batter into prepared baking pan & steam in a steamer for 2 hours OR more
until the cake is firm. Serve hot with tea & enjoy.

Note: Stick the middle of the cake with a small wooden stick & if it comes out clean, it's done.


Arghh, the whole house smells so fragrant. =D

Eve's Corner

Went here a few times. Food's quite good & the price is affordable.
The atmostphere's kinda relaxing & wi-fi is available.
Here's what I had.


Beef Rendang with a side of local veges & sambal.
I had this lovely beef rendang & I think this is the best
beef rendang I've ever had.


 The sambal (prawn paste) was different from what I've always tasted.
But it was really good & spicy.


Fish & Chips.
Quite good too.

I love the gravy!!

Siamese Secret

I really LOVEEE eating at this place.
Prices are moderate, I mean not too expensive but also not too cheap.
But it's worth it since the portion is a lot!!!

Breaded Chicken Breast

Love to make this every time I feel like having it.
Almost like having my own homemade nuggets.



You'll need:

2 pieces of chicken breast - sliced long
2 cups of ready made bread crumbs OR more
1 egg
Black pepper to taste
Chilli pepper to taste
Seasoning
2 cups OR more oil for deep frying

~ Marinate chicken breast with eggs, black pepper & chilli pepper.
Seasoned it to taste.

~ Heat oil in frying pan. Cover marinated chicken breast with bread crumbs one by one.
Fry until golden brown. Serve hot with mayonnaise dipping. (mayo+chilli sauce+dash of tabasco)



I add the egg in the chicken breast after this photo's taken.
The egg kinda helps the bread crumbs to coat the chicken better.

Chocolate Mud Cheesecake

This is my first ever cheesecake that I made for my husband's birthday 3 years ago.
I regret not taking a picture of a slice but I can guarantee for those who are chocoholic will
definitely love this.

Preheat oven to 180degrees celcius (360degrees fahrenheit)
Wrap the bottom & sides of a 8" baking pan with aluminium foil & set aside.

Ingredients:

Base
180g of Mcvities Digestive Biscuits
80 - 90g melted butter

~ Crush biscuits & mix with melted butter until well combined.
Press evenly onto the base of prepared baking pan. Let it set in the refrigerator.

Filling
500g cream cheese (Philadelphia cream cheese)
100g castor sugar
3 large eggs
220ml melted chocolate
250ml UHT whipping cream
30g corn flour
20g cocoa powder

Chocolate Ganache:
375g chocolate
50ml milk
200ml UHT whipping cream
20g butter

~ Beat cream cheese & sugar. Add eggs one by one.
Mix in melted chocolate (which you double boil first), UHT whipping cream, corn flour,
& cocoa powder until well combined. Pour in filling into prepared base &
place in a larger baking tray. Fill the larger baking tray with hot water &
bake at 180 degrees celcius for about 20 minutes. Then reduce it to
150 degrees celcius & bake for another 50 minutes OR more until the cake is firm.

~ While the cake is baking, prepare the chocolate ganache.
Melt chocolate over a double boil method.
Add in milk, UHT whipping cream & butter.
Stir until smooth.

~ When the cake is done let it cool on the counter.
After it's cool enough, pour ganache on top & spread it.
Refrigerate overnight  & serve chill. Enjoy.
