Monkey Bread

Made this 3 weeks ago.
My second time making & another success.
Yummy!!

Grease bundt pan with butter.
Preheat oven 170degrees celcius (338degrees fahrenheit)

Ingredients: 


2 1/2 teaspoons instant yeast
3 - 3 1/2 cups flour
1 teaspoon salt
3 tablespoons sugar
~Mix all dry ingredients in a bowl

1/4 cup water
1/2 teaspoon vanilla extract
1 large egg
2 tablespoons melted butter
3/4 cup warm milk
~Mix all wet ingredients & combine with dry ingredients until it becomes a dough.
Add more flour if dough is too wet. Knead the dough until well combine.
Wrap in plastic wrap & let it rise for an hour.

2 cups brown sugar
1 tablespoon ground cinnamon
~Mix in a bowl

1/2 cup melted butter
~In another bowl

~After an hour, flatten dough on a floured surface about 2cm thick.
Cut dough into squares about an inch big.
Take each squares, roll it into balls & dunk in the melted butter.
Cover the balls with melted butter & roll in the brown sugar mixture.
Make sure the balls are covered with brown sugar mixture, the more the better. ^^

~Each dough are then to be arranged in the bundt pan.
This portion normally fills up half OR 3/4 of the bundt pan.
Do not worry as the dough will rise when cook.
Wrap the bundt pan & leave for 20 minutes OR half an hour to rise.

~After 20 minutes, sprinkle the leftover brown sugar mixture on top but not too much as it will burn.
Then put a few dollops of butter on top of the dough & sides of the pan.
This process will make the bread shiny & caramelized.
~Bake for 30 minutes & let it cool on the counter for about 10-15 minutes before flipping it out.
Enjoy it with hot tea. Yum...

Blueberry & Chocolate Chip Cheesecake


Baked this last year for my husband. ^_^
This will need at least 1hour to 1hour 30minutes baking OR more.

Preheat oven to 180degrees celcius (360degrees fahrenheit)
Wrap the bottom & sides of a 8in baking pan with aluminium foil & set aside.

Ingredients:

Base
150g to 180g of Mcvities Digestive Biscuits
75g melted butter

~ Crush biscuits & mix with melted butter until well combined.
Press evenly onto the base of prepared baking pan. Let it set in the refrigerator.

Filling
500g cream cheese (Philadelphia cream cheese)
100g castor sugar
3 large eggs
280ml whipping cream
1/2 teaspoon vanilla extract
250ml sour cream (If not available, simply mix double cream & 2 to 3 tablespoons of lemon juice)
3 tablespoons chocolate chips (more or less, according to ones desire ^^)

~Beat cream cheese & sugar. Add eggs one by one.
Mix in the rest of the ingredients until well combined.
Pour in filling into prepared base & place in a larger baking tray.
Fill the larger baking tray with hot water & bake for about 1hour to 1hour 30minutes.
If the cake is still wiggly, bake for another 20 minutes OR until almost firm.
Leave cake to cool & refrigerate overnight.

Cake Decoration
Half a jar OR more of blueberry jam (CHIVERS brand)
1cup of whipping cream

~Whip whipping cream until fluffy.
Spread blueberry jam in the middle of the cake & pipe whipping cream all around.
Serve chill & enjoy.
