Chicken Meatballs Bolognese

Well, I was looking in the fridge hoping to cook something non-carb for out diet.
So I came up with chicken meatball bolognese.



Yeah I know it's messy but I was very hungry so what the heck!

Ingredients:

2 big skinless chicken breast - minced in a food processor
1 stalk of celery - diced
1 whole carrot - diced
1 onion - diced
1 egg
A handful of breadcrumbs OR flour - put in little by little whilst mixing until you get
right texture OR until you can form it into a ball
2 tablespn chilli pepper/flakes - omit this if you don't like spicy
1 teaspn of powdered chicken stock
1 teaspn black pepper
1 teaspn of salt
~ Mix all above in a bowl. Take a bit of the mixture, form to a patty,
fry it in a pan with some oil & taste it, see if it needs more salt OR pepper.
~ When seasoning is perfect, wet your hands with water & form the mixture into balls.
(I made huge balls out of it, as big as a golf ball) Fry it in some shallow oil until
brown & crispy. Drained it on a kitchen towel.

1 handful of cauliflower & broccoli
~ Sprinkle with little salt & bake in 150 degrees celsius until brown & caramelized

1 tablspn of mix herbs
2 cloves of finely chopped garlic
1 - 2 cups of tomato sauce
1 - 2 cups water (depends on how thick you want your sauce to be)
1 handful of canned button mushrooms - sliced thinly
Seasoning, black pepper & sugar to taste
~ Fry garlic with some oil & add in mushrooms. Pour in tomato sauce, water & mix herbs.
Seasoned, add black pepper & sugar to taste.
~ Dunk the balls in one by one & make sure that every chicken balls are covered with sauce.
Let it sit for 2 - 3 minutes & stir just to make sure every chicken balls are coated evenly.
Serve hot & sprinkle some of the baked veggies on top.


Baked Chicken Roll Ups & Sauteed Onion Sauce

Here's another chicken dish I made. Also for the sake of cutting down on
carb.


Ingredients

Preheat oven to 150 degrees celsius

2 thick skinless chicken breast - butterflied
1 carrot - peeled, cut into stick like, thicker than french fries, blanch in hot water until almost soft
(length depends on how big your chicken breast is)
4 french beans - blanch in hot water until almost soft
1 celery stick - cut into stick like, thicker than french fries
(length depends on how big your chicken breast is)
2 handful cauliflower - blanch in hot water until almost soft
1 handful of broccoli - blanch in hot water until almost soft
1 - 2 cloves of finely chopped garlic
3 tablspns of butter
3 tablspns of Heinz BBQ sauce
seasoning & black pepper to taste
5 - 6 toothpicks
Sauteed Onion Sauce

~ Seasoned the butterflied chicken breast & add Heinz BBQ sauce. Any BBQ sauce will do.
~ Get 2 sticks of blanched carrots, blanched french beans & celery, put in the middle of seasoned
chicken breast. Wrap it tightly & using toothpicks to seal the ends. Make sure the veggies
doesn't fall out easily & if it does, unwrap & wrap it back tightly.
~ Grease a baking pan with oil & place the wrapped chicken breast on.
~ Bake it for 30 - 40 minutes or less until golden brown/cooked through.
~ Heat the butter in a non-stick pan & fry garlic until fragrant.
~ Add in cauliflower & broccoli, stir fry until all veggies are coated with garlic butter. Seasoned &
black pepper to taste.
~ Plate nicely & pour some Sauteed Onion Sauce .
Serves 2 big veggie eaters.

Bibimbap

I've been anticipating in making this korean dish called "bibimbap" for quite a while now.
A mix rice with this spicy sauce called "gochujang".
Almost like our typical fried rice but totally different taste & no oil.


Bibimbap

Ingredients:




Cooked rice
A handful of chopped spring onions & flat leaf parsley
2 fried eggs, half cook (fry OR boil)
Leftover chicken, shredded
1 carrot peeled & cut into thin strips about 2inches long
~  Add 2tablespoons of cooking oil OR sesame oil (not olive oil) in non-stick pan,
fry carrots until almost soft. Seasoned carrots with very little seasoning. Put aside.

5 dried shiitake mushrooms soaked in warm water until soft & sliced thinly
~ Add 2tablespoons of cooking oil in the same pan, fry mushrooms & add a teaspoon of
oyster sauce. Put aside.

Half a cup of dried black fungus soaked in hot water until soft & washed clean
~ Add in 1tablespoon of cooking oil in the same frying pan again & fry fungus until quite soft.
Seasoned with very little seasoning.

1 bunch of Chinese Chives, washed cleanly & cut into 2inches long
~ Add in 2 tablespoons of cooking oil, stir in minced garlic, fry until fragrant & add in
chinese chives. Fry until soft & seasoned with very little seasoning.



1cucumber, washed cleanly, cut into half & scoop out the seeds, cut into pieces.
~ Put sliced cucumber in a bowl, add in 1 tablespoon of vinegar, 1-2 tablespoons of sugar,
pinch of salt & a tablespoon of gochujang. Mix & put aside.


Gochujang Paste
3-4 tablespoons of gochujang paste (OR to taste)
1 tablespoon vinegar (OR to taste)
2 tablespoons honey (OR to taste)
1 tablespoon of sesame oil (OR to taste)
2 tablespoons of sesame seeds, toasted (OR to taste)
soy sauce to taste
~ Mix everything in a bowl put aside.


Assemble everything in a large bowl & put 2 tablespoons of gochujang paste.


Paste wasn't enough. =P


Yummy.

Simple Veggies as Side Dish

Made a simple side dish for steaks & chops. (Chicken, prok, lamb OR beef)

Simple Veggies
1 handful of cauliflower
1 handful of broccoli
Half stick of carrot - chopped into chunks
1 tablespoon of Italian dressing
Salt & Black pepper
1 teaspoon of dried parsley OR chopped fresh flat leaf parsley

~ Boil cauliflower, broccoli & carrots until almost soft. Dress veggies with Italian dressing
& add in dried parsley. Seasoned to taste & done.

P/S: Another dressing is to melt 3 tablespoons of butter & fry chopped garlic until soft & fragrant.
Pour onto boiled veggies & seasoned well OR to make things easier, melt 3 tablespoons of
store bought garlic butter & pour onto boiled veges.

Sauteed Onion Sauce

Made simple sauce for chicken chops OR any steak. (Lamb, beef OR pork)

Sauteed Onions Sauce 
1 big onion - sliced thinly/thick
3 tablespoons of oil
1 tablespoons of chilli powder (lesser for less heat)
1 - 2 tablespoons of sugar
2 - 3 cups of water/chicken stock (depends on how much sauce)
Salt & Black pepper to taste
1 teaspoon of corn starch + half cup of water (for thickening)
1 teaspoon worcestershire
4 - 5 splashes of tabasco

~ Add oil in a non-stick pan on a medium high heat. Add onions & chilli powder.
Stir fry onions until almost soft. Add sugar & mix well. Pour in water & seasoned with salt
& black pepper. Thicken sauce with corn starch water.
Lastly, mix in worcestershire & tabasco. Done.

Grilled Chicken with Sauteed Onion Sauce & Simple Veggies




Recipe's for one serving. Double everything for 2 servings.

Ingredients:
Grilled Chicken
1 piece chicken breast - skin off & butterflied
1 tablespoon of BBQ sauce
Salt & Black Pepper to taste
1 teaspoon of chilli powder/flakes (optional)

~ Mix all in a bowl & refrigerate while prepping for the sauce & veges.
After done prepping, grill chicken on a lightly greased non-stick pan,
2 - 3 minutes each side OR until cook.

I did a simple sauce & veggies:



Pour sauce on grilled chicken & a bit on veges.

Pizza

Made pizza for our 2nd wedding anniversary.
It tasted not so bad. Could have done better.



Preheat oven 180 - 200 degrees celcius.

Pizza dough:
Wet ingredients
250ml warm water
2 tablespoons vegetable oil

~Prepare wet ingredients in a bowl.

Dry ingredients
500g all purpose flour
100g castor sugar
1 packet of instant yeast (11g per packet)
Pinch of salt

~ Dry ingredients in another bigger bowl.
~ Mix wet ingredients into dry ingredients slowly, whisking with a fork until well combined.
It should look flaky. With your hands knead dough slowly on a flat surface.
You'll know it's done when the dough looks smooth like this.


Wrap it in a plastic wrap.


Keep it in a dry warm place such as the oven, for an hour.
After an hour, unwrap it & knead again for few minutes.
Let sit in the bowl & keep in oven for another hour.


Tripled in size. So cute. XD


Now for the best part in making this dough. Punch it in the middle
to let the air out. YEAH!

Before kneading the dough, flour the surface to prevent sticking.
Divide dough into 2.
With rolling pin, flatten dough until as thin as possible or to your liking.
I was lazy so I use my hands instead, punching & stretching the dough.
Grease & flour baking pan, carefully put the pizza dough on it.


I made a huge mistake. I didn't grease or even flour the baking pan.
The result was, the pizza stick to the pan after baking.
Was soooo frustrated trying to get it off the pan. =/


The round & square pizza had the same topping.
The normal tomato paste, some pre-made beef bolognaise,
thinly sliced canned button mushrooms, green bell peppers, canned pineapples,
onions, cheddar cheese & grated mozarella.

Finally the cheeses.
Baked it for 15 minutes or more or until the dough is golden brown.
