Macaroni Salad

Had this for dinner the other day. Wasn't that bad.
Should have added more mayo as it dries up pretty easily.

Ingredients:

250 g Macaroni - boiled in water, salt & oil
125 g raisins OR to taste (sultanas; optional)
2 - 3 big tomatoes - deseeded & sliced
1 - 2 chicken breast - marinate, pan fry & sliced
2 cups of finely chopped cabbage OR lettuce
1 big apple - sliced (2 small ones)
2 - 3 tablespns of mayonnaise OR to taste
200 g (1cup OR less) Low Fat Natural Yoghurt
1 - 2 tablespns of sugar OR to taste
Pinch of black pepper & salt

~ Boil macaroni until soft or well done. Drain & let cool for a while.
Marinate chicken breast with chilli pepper & seasoning. Pan fry chicken breast until well done
& slice according to how you like it.

~ In a small bowl mix mayonnaise, yoghurt, sugar, black pepper & salt.
Taste it to make sure it suits your taste.

~ In a bigger bowl, put in macaroni, raisins, sliced tomatoes, sliced chicken breast,
cabbages & sliced apples. Add in the mayonnaise mixture & toss everything evenly.
Chill in the fridge for 2 hours & enjoy. Serves 2 very big appetite people.


Note: Any other fruits can be added in; pear, grapes, mango, etc.
If the dressing gets too dry, simply add in more mayo or yaghurt to taste.

Comparison of my 3 Lasagnes



This is my very 1st Lasagne. Both didn't have white sauce.


Didn't have a long rectangular baking dish,
so I split it into 2 round ones.


Very funny looking slice.


My 2nd Lasagne.


I think this had only 2 layers in it.
Also without white sauce.


And my 3rd one with white sauce.


I can honestly say, with the white sauce it actually makes lots of
difference. Tasted better, creamy & very fragrant.

My Version of Lasagne

I love lasagne, making it, baking it & of course eating it. XD
This will be my 3rd time making lasagne & this version is much
better than the other 2.
I didn't get to do a good white sauce for my other 2, but this time
I did & it was yummy!!!



Preheat oven to 180 degrees celcius.

Ingredients

250 g of Lasagna sheets (1 packet) + more if needed
1 chopped big onion (2 small ones)
3 cloves of chopped garlic
2 tablespoons of dry mix herbs
1 tablespoon of dry chopped basil
400 g of minced beef / chicken / pork OR mix
1 diced carrots
2 - 3 buck of celery - diced
1 green diced capsicum (red & yellow capsicum; optional)
5 fresh chopped tomatoes
1 can button mushrooms - sliced
1 can of Campbell's Traditional Spaghetti Sauce OR 1 packet of Maggie Bolognese Sauce Mix
(substitute-tomato paste, tomato puree & tomato sauce)
Half a bottle of Maggie tomato sauce
1000 ml of water (add in more water for more sauce)
1 handful of chopped Italian Flat Leaf Parsley (Daun Sup)

Half a cup of water + corn flour (to thicken the sauce)
Black pepper & seasoned to taste

200 g of shredded Mozarella cheese
200 g of shredded Cheddar cheese
200 g of grated Parmesan cheese
*1 tablespoon of chilli pepper for those that love spicy

White Sauce:

110 g butter (1/2 cup)
1/4 cup flour (add more if not thick enough)
2 1/2 cups milk
1 tablespoon of cheddar cheese
Pinch of salt & black pepper




~ Heat 4 - 5 tablespoons of oil in a cooking pot. 
Fry onions, garlic, dry basil & mix herbs until fragrant.
Add in minced meat, & fry until almost cook.


~ Mix in the diced carrots & celery fry until almost soft .


~ Add in diced tomato, diced capsicum, Campbell's Spaghetti Traditional sauce
& sliced button mushroom. Stir until well combined.


~ Add in water & maggi tomato sauce. Crack some black pepper & seasoned it to taste.
I did add in at least 2 tablespoons of chilli pepper to give a bit of heat.


~ Last but not least mix in Italian Flat Leaf Parsley.
To thicken sauce, mix some water in a bowl & 3 tablespoons of corn flour.
Pour into sauce & stir until it thickens.


~ Melt butter in a NON-STICK pan. Add in flour & stir until it's
a bit golden in colour. Pour in milk & mix until it thickens.
Add in more flour if the sauce is not thick enough.
Seasoned with salt & black pepper.
Sprinkle cheddar cheese & done.
The right consistency is when the white sauce coats
the wooden spatula as in the picture above.


~ Put 1 big scoop of sauce for the base.


~ Layer lasagna sheets until it covers the sauce fully.
Break some to fill in empty spaces.


~ Spread white sauce on top of the sheets.


~ Sprinkle mozarella, cheddar & parmesan on top of white cheese.


~ Pour another scoop of sauce, layered with sheets, white sauce spread,
sprinkles of cheeses; continue this process until
the sauce finishes.


 ~ It should ends with sauce & sprinkles of all of the leftover cheeses.
Mozarella, cheddar & parmesan.


Like so.


~ Bake for 25 minutes with aluminium foil on.


~ And another 25 minutes foil off.


~ Let it cool on counter before cutting or else everything will fall off.


~ Tadaa. Love the golden crust on top!


Hot & bubbly out of the oven.


Well I couldn't wait so I cut it while it's still hot. XD
Ohhh oowey goowey cheese.


This is after an hour of letting it cool. Not so messy.
But sorry for the messy plate. First batch mess.

Crunchy top layer & melty cheese in the middle.
Dash of tabasco & heavenly.


Best part bout this was, hubby & mother in law enjoyed it.

Steam Green Mud Cake (Kek Lumut)

There's so many different types OR version of this cake.
Some had tea in it. Well, this is my mom's another version & I loved it.
Made it with her last Sunday and another success. Moist & soft. Yummy. ^^


Ingredients:

340 g butter (12 oz)
180 g castor sugar
8 large eggs (10 for medium / small)
200 g of sweetened condensed milk (Half a can of small canned condensed milk)
1 teaspn of vanilla extract
1 teaspn of baking powder
100 g flour OR more if your prefer it to be less chewy
120 g Horlicks
250 g Nestum (small packet)
1 1/2 caps of green colouring (OR less, to your liking)

~ Line the bottom of a square 9" X 9" baking pan with aluminium foil / baking paper.
Grease the sides with butter & flour. Set aside.

~ Beat butter & sugar until fluffy. Add eggs, condensed milk & vanilla extract. 
Mix until well combined. Sift baking powder & flour over the mixture.
Add in  Horlicks & Nestum. Combine it in slowly. Lastly, mix in the green colouring.

~ Pour batter into prepared baking pan & steam in a steamer for 2 hours OR more
until the cake is firm. Serve hot with tea & enjoy.

Note: Stick the middle of the cake with a small wooden stick & if it comes out clean, it's done.


Arghh, the whole house smells so fragrant. =D


The Horlicks & Nestum's the trick to the gorgeous smell. ^^

you take your first bite. I had it with hot tea. Yummy.

Eve's Corner

Went here a few times. Food's quite good & the price is affordable.
The atmostphere's kinda relaxing & wi-fi is available.
Here's what I had.


Beef Rendang with a side of local veges & sambal.
I had this lovely beef rendang & I think this is the best
beef rendang I've ever had.


 The sambal (prawn paste) was different from what I've always tasted.
But it was really good & spicy.


Fish & Chips.
Quite good too.


Breaded Chicken Chop.


Lamb & Chicken Chop with gravy.
I love the gravy!!
