Excapade Sushi (Kuala Belait)

Yeah, Excapade. One of the best Japanese sushi house. Never little, always generous. Some of the sushi names aren't correct, so I'm just gonna describe it. ^_^ Droll~~~

Kolok Mee & Wantan Soup


Homemade kolok mee & wantan soup. Yummy.

For the minced chicken on top of kolok mee;
2 pieces of chicken breast (OR chicken thigh/pork), minced
2 cloves of garlic, chopped finely
2 to 3 black shitake mushrooms, soaked,wash & chopped/sliced finely
1 tblspn of oyster sauce
White pepper powder,
Few splashes of thick soy sauce,
Sugar & Seasoning to taste,
3 tblspn of oil,
1/2 to 1 cup of water,

~In frying pan, heat the oil for a few seconds. Fry the garlic until you smell the nice garlic aroma.
Then put in the minced chicken breast & stir fry it until it becomes white-ish in colour.
Mushrooms & oyster sauce in, stir fry again. Splash a few drops of thick soy sauce or as much as how you prefer it. Add water. Seasoned it (Not too salty as thick soy sauce is quite salty) & add sugar little by little, not too sweet. Add in corn flour (2 teaspn corn flour + 5 tblspn of water) & lastly white pepper to taste.
Stir continuously until it thickens & done.
* If you find it too salty, just add a bit of water AND OR sugar until it taste just right for you.

For the kolok noodle;
In a bowl;
1 teaspn of oyster sauce,
1/2 tblspn of thick soy sauce, (Can use either sweet or the normal thick soy sauce)
1 tblspn of fry crispy shallots, (OR as much as u want =P)
1 teaspn of oil, (It's better to use the oil that u fry the shallots with)
1 tblspn of chilli sauce, (Only if you want it spicy)
Seasoning to taste,
Poach a handful (OR 2 handful =D) of noodles in boiling water for a few minutes until soft.
(Poach longer for those who like it softer)

~Mix the noodles in the bowl with all the ingredients, garnish it with the minced chicken, chopped spring onions, fry crispy shallots & whalla; kolok mee for 1 or 2. Hehe... ^^

Wantan;
Wantan skins,
2 chicken breast (OR chicken thigh/pork), minced
1 clove of garlic, minced
1 teaspn of sesame oil,
Seasoning & white pepper powder to taste,

~Set wantan skin aside & mix the rest in a bowl. Wrap in the wantan skin & put aside.
Leave 1 tblspn of the meat mixture for the soup.
To wrap, rub the 4 sides of the wantan with water (Not too watery), put at least 1 teaspn of chicken mixture in the center of the wantan skin (Not too much).
Take all 4 edges & hold while pinching the four sides to the middle to cover the meat (Not too tight as it will burst). Make sure the meat is covered or else it'll leak out when cooking.

Soup;
1 tblspn of chicken meat mixture,
2 tblspns of oil,
3 to 4 cups of water,
Sawi (Mustard Greens) or Bok Choy, chopped
Seasoning & white pepper powder to taste,

~In a pot, let the oil heat for a bit. Add the 1 tblspn of chicken mixture & stir fry it for a moment.
Add in water & bring it to boil. Season it & white pepper powder to taste.
Put the vege in last & turn off the fire, set aside.
Boil water in another different pot, dunk in wantan 1 by 1 until the skin's soft but not too soft or else it'll get soggy. Bring it out & in the soup, done. ^^
